Breakfast for Dessert!



As you may know, I lovelovelove yogurt. Especially the tarty taste of Greek/Turkish yogurt. Iceland has its own little national yogurt called "Skyr" and from what I can gather it's pronounced like "skeeer" with a retroflex r. This might be completely wrong because I managed to not pick up any Icelandic aside from thanks (takk), hello (hai) and what to say during a toast (skol!). But anyways, back to the yogurt...

Skyr is something like a national pasttime in Iceland. It's EVERYWHERE. In gas stations, corner stores, coffee shops and restauarants in some variation. The fancier versions, seen above, are more like a Skyr mousse. So very very light and creamy and then have some sort of berry reduction or compote going on on the side.

The weirdest thing about desserts with Skyr is that it retains all its properties (mostly) of being low-fat and healthy but it tastes DELICIOUS and it's DESSERT. It seems like it's quite possible to have an entire Skyr meal- the plain yogurt, the berry shake and the mousse dessert.

  2. I think Skol is produced here, isn't it? Reyka is an Icelandic vodka though. Next time I see you, I'll bring Brennevin. Or Opal or Topas. They taste like salted barf.
